Gluten Free Banana and Date Muffins


Hey there everyone. Hope you had a blessed Sunday. Today I woke to the fragrant smell of hot sweet sugar and cinnamon wafting from the kitchen oven. Mom got up early to bake some legendary muffins for breakfast – best of all, they were gluten free, so I could scarf down as many as I wanted without feeling too nauseous.

To make this scrumptious muffins you will need the following ingredients:

1 pinch of salt
1 level teaspoon of bicarbonate of soda
1 teaspoon of ground cinammon
Two bananas
Two eggs
Half a cup of brown sugar
Half a cup of mealie meal
Half a cup of gluten free flour
Half a cup of almond flour
200 mls of warm milk
200 grams of chopped dates
150 grams melted butter

Whip it all together with an electric egg beater and let it stand for 20 minutes for the mealie meal to absorb the moisture – not sure of the science behind it, but it helps so just do it.
Spoon batter into a presprayed muffin pan and bake it in a preheated oven at 180 degrees celcius for 15 to 20 minutes.


Once your muffins have baked, serve them with fresh cream and a spoon of creamed honey.
